Grilled + Marinaded Cauliflower Steak

If you’ve ever thought a plant-based meal couldn’t feel like a true steakhouse experience, I’m here to prove you wrong. Cauliflower steak is not only a total showstopper, but it also has that rich, savory, and satisfying vibe that’ll make you feel like you’re dining out at your favorite fancy restaurant.

So, whether you’re vegetarian, vegan, or just looking to switch things up on a Sunday night, this cauliflower steak dinner will definitely wow you — and your guests. We’re pairing it with some roasted asparagus and crispy smashed potatoes for the perfect steakhouse-style dinner, minus the meat.

Why Cauliflower Steaks?

I know, I know — cauliflower probably isn’t the first thing that comes to mind when you think “steak.” But trust me, once you cook cauliflower this way, it’ll blow your mind. When roasted and seared the right way, cauliflower gets this incredible crispy golden edge with a soft, meaty inside. It’s hearty, satisfying, and packed with flavor.

Plus, cauliflower is like a blank canvas, which means it absorbs whatever marinade you throw at it. And when you load it up with umami, smokiness, and a little touch of balsamic, it’s like having your own plant-based steakhouse feast at home.

The Marinade: Flavor is Key

What really makes this cauliflower steak stand out is the marinade. I’m not talking about just a drizzle of olive oil here. We’re talking about a bold combination of soy sauce, smoked paprika, garlic, and balsamic vinegar. This marinade seeps deep into the cauliflower and gives it all the flavor you’d expect from a juicy steak.

Pro tip: If you have time, let the cauliflower marinate overnight. The longer it soaks in those flavors, the more delicious it becomes. Honestly, if you’re feeling extra, you could even marinate it for 48 hours (just make sure to go light on the salt to keep things balanced). It’s totally worth the wait.

Now, the key to making cauliflower steakhouse worthy is the cooking method. You want to sear the cauliflower steaks first, so they get that golden crispy edge, then finish them off in the oven to get perfectly tender on the inside. It’s all about that balance between crispiness and tenderness — like the best steak you’ve ever had.

And while your cauliflower is roasting, you’re going to make a mushroom red wine sauce that’s going to elevate this dish to next-level delicious. Think savory, earthy mushrooms, shallots, garlic, and red wine, all coming together to create a rich sauce that’s perfect for drizzling over the cauliflower steaks.

The Sides: Roasted Asparagus & Crispy Smashed Potatoes

Every great steakhouse dinner needs killer sides, and I’m keeping it simple with roasted asparagus and crispy smashed potatoes. Asparagus just needs a little olive oil, garlic, and lemon zest to become something amazing. And don’t even get me started on the smashed potatoes. They’re crispy on the outside, creamy on the inside, and seasoned to perfection with rosemary and flaky sea salt.

Why This Is the Perfect Sunday Dinner (or Any Night, Really)

You might be thinking, “Okay, this sounds incredible, but it seems complicated!” Don’t worry — while it looks fancy, this cauliflower steak dinner isn’t actually that hard to pull off. You can marinate the cauliflower the night before (or even two days ahead), then sear, roast, and assemble everything the day of.

It’s the kind of dish that feels like you’re treating yourself to something special, but you’re not spending hours in the kitchen. Whether you’re having a cozy night in, celebrating something small (or big!), or just craving a restaurant-quality meal at home, this recipe has you covered.

Your Steakhouse-Inspired Cauliflower Steak Awaits

Ready to turn your Sunday dinner into a showstopper? This cauliflower steak will wow everyone at the table (even the non-vegetarians). With a rich marinade, crispy edges, and that gorgeous mushroom sauce, it’s honestly a plant-based meal that feels as indulgent and satisfying as any steakhouse dinner.

So next time you’re craving something a little extra, go ahead and treat yourself to this cauliflower steak dinner. You won’t regret it — I promise.

Ingredients

  • 1 large head of cauliflower pick one heavy for its size
  • 2 –3 tbsp olive oil

Overnight Cauliflower Marinade (for 2 steaks)

  • dijon mustard
  • 3 tbsp olive oil
  • 1 tbsp soy sauce or tamari
  • 1 tbsp balsamic vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground mustard optional but adds a sharp “steakhouse” note
  • Cracked black pepper to taste
  • Optional: A dash of maple syrup or agave for balance
  • 1 tbsp olive oil
  • 1 tbsp vegan butter
  • 1 cup finely chopped mushrooms cremini or shiitake for best flavor
  • ½ cup dry red wine cabernet or merlot
  • 1 tsp balsamic vinegar
  • 1 tsp fresh thyme or ½ tsp dried
  • Optional: 1 tsp cornstarch + 1 tbsp water for thickening, if needed or desired.
  • Asparagus: Tossed with olive oil and lemon zest or garlic
  • Smashed potatoes: Tossed with olive oil and lemon zest, rosemary, or salt.

Instructions

Prep the Cauliflower Steaks

  • Trim the leaves, then slice the cauliflower into ¾ to 1-inch thick steaks (usually 2 full steaks per cauliflower, the rest will be florets — save for later!).
  • pan roast cauliflower in a cast iron pan for 5 minutes, flipping halfway. This is to get a beginning sear before marinade.
  • Whisk marinade together.
  • Place cauliflower steaks in a shallow dish or sealable bag.
  • Brush or pour marinade over both sides.
  • Cover and refrigerate overnight (or at least 8 hours, no longer than 48 hours).
  • Remove from the fridge 20 minutes before cooking to let them come to room temp.
  • Brush both sides with olive oil. Season with paprika, garlic powder, onion powder, salt, pepper, and a touch of soy sauce.
  • Prep the grill – get it up to temperature (shoot for ~400 degrees)
  • In a grill safe container or in aluminum foil, put the seasoned potatoes on the grill first.
  • Next on the grill, sear cauliflower steaks for 10 minutes per side, until golden and cooked through (baste if desired with leftover marinade).
  • Transfer pan to oven and roast for 20–25 minutes, flipping halfway. (Baste with pan juices halfway if desired.)

Make the Sauce

  • In a saucepan, very lightly oil and add mushrooms and cook down for 7-8 minutes.
  • Add thyme, white miso and red wine. Deglaze with the wine, scraping the pan.
  • Add a pat of butter, mix in thoroughly.
  • Simmer for 10 minutes until reduced to a semi-thick but smooth texture.
  • Taste and adjust seasoning.

Prepare Sides

  • Asparagus: Roast on a sheet at 425°F for 10–12 mins with olive oil, garlic, salt, and lemon zest.
  • Smashed potatoes: Boil small potatoes until fork-tender. Place on baking sheet, smash gently, drizzle with olive oil, salt, rosemary. Bake at 425°F for 25 mins or until crisp.

Plate It Like a Pro

  • Place the cauliflower steak in the center.
  • Spoon the rich mushroom sauce over it like a steakhouse demi-glace.
  • Add asparagus on one side, smashed potatoes on the other.
  • Garnish with fresh thyme or parsley and cracked pepper.

Notes

🍷 Pairing & Vibe: Drink: A glass of red wine (Cab or Pinot Noir), or a zero-proof red blend if you’re going alcohol-free. Finish with: A dark chocolate square or a baked apple crisp for dessert. Want to make it even more luxe? I can give you a herbed compound butter to melt over the cauliflower or a truffle aioli drizzle.
Pro Tip: After marinating, pat them dry lightly with a paper towel before searing — not fully dry, just enough so they brown better. Then follow the sear + roast method above, maybe brushing with a bit of fresh oil and butter while roasting.
