Roasted Cauliflower Salad

Ingredients
For the Roasted Cauliflower:
- 1 large head cauliflower cut into bite-sized florets
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 ½ teaspoons curry powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon ground mustard
- ½ teaspoon sea salt
For the Roasted Chickpeas:
- 1 can chickpeas drained, rinsed, and patted dry
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- Pinch of sea salt
For the Salad Base:
- 4 cups spring mix greens
- 1 ripe mango peeled and diced
- ½ cucumber thinly sliced
- 2 green onions chopped
- ¼ cup fresh cilantro leaves
Optional – Homemade Hummus (or Store Bought):
- 1 can chickpeas drained, skins removed if preferred
- ¼ cup tahini
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 garlic clove
- Salt to taste
- 2 –4 tablespoons water to thin as needed
Instructions
Roast the Cauliflower:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, lemon juice, and all the spices. Spread evenly on the baking sheet.
- Roast for 25–30 minutes, flipping halfway, until golden and crisp on the edges.
Roast the Chickpeas:
- While the cauliflower is roasting, dry the chickpeas thoroughly using a clean towel.
- Toss with olive oil, paprika, garlic powder, and salt. Spread them out on another baking sheet or use space on the same sheet.
- Bake for 20–25 minutes, shaking the pan halfway through, until crispy.
Make the Hummus (if using homemade):
- Add all hummus ingredients to a blender or food processor and blend until smooth. Add water 1 tablespoon at a time until creamy.
Assemble the Salad:
- In a large bowl or platter, lay down the spring mix. Top with roasted cauliflower, roasted chickpeas, diced mango, cucumber slices, green onion, and cilantro.
- Spoon small dollops of hummus across the salad for a creamy contrast in each bite.
