Ultra-Creamy Classic Hummus

Equipment

  • 1 Small saucepan
  • 1 Fine mesh strainer or colander
  • 1 Food processor (preferred) or high-speed blender
  • Measuring spoons & cups
  • 1 Spatula
  • 1 Serving bowl

Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • ½ tsp baking soda
  • ¼ cup fresh lemon juice 1 large lemon
  • ¼ cup tahini smooth and runny preferred
  • 1 small garlic clove minced
  • 2 tbsp extra virgin olive oil plus more for serving
  • ½ tsp ground cumin and paprika
  • ½ tsp kosher salt more to taste
  • 2-3 tbsp ice or very cold water for fluffiness/lightness!
  • Dash of paprika or sumac for garnish (optional)

Instructions
 

Soften the chickpeas

  • Place chickpeas in a small pot with ½ tsp baking soda. Cover with water and bring to a simmer for 15–20 minutes until very soft. Drain and rinse under cool water.

Whip Tahini and Lemon

  • In a food processor, blend tahini and lemon juice for 1 minute until light and creamy. This step helps make the hummus extra fluffy.

Add Garlic, Olive Oil, Cumin, and Salt

  • Blend in the garlic, olive oil, cumin, and salt. Scrape down the sides as needed.

Add Chickpeas

  • Add the soft chickpeas to the processor. Blend until thick and smooth, about 1–2 minutes.

Thin with Ice Water

  • With the machine running, drizzle in 2–3 tbsp of ice water until the hummus is super smooth and light.

Taste and Serve

  • Adjust salt or lemon as needed. Spoon into a bowl, drizzle with olive oil, and dust with paprika or sumac if desired.

Notes

💡 Pro Tips: -Use ice water instead of regular to emulsify and lighten the hummus. -Tahini matters – look for a smooth, pourable brand (like Soom or Seed + Mill) for the best texture. -For extra creamy hummus, you can remove chickpea skins by gently rubbing them with your hands while rinsing (optional, but makes it even silkier).
 
Want to make it faster? Skip boiling and just blend the chickpeas directly—still good, just not cloud-level creamy.
