Sweet potato planks roasted until caramelized and tender, then topped with 4 different topping combinations for a fun, impressive sweet potato toast flight.

Ingredients
  

  • 2 large sweet potatoes sliced lengthwise ¼-inch thick
  • Olive oil spray or brush
  • Salt

Topping 1: Avocado & Everything Bagel:

  • ½ avocado mashed
  • Everything bagel seasoning
  • Red pepper flakes
  • 1 Scrambled egg
  • 1 Grape Tomato sliced

Topping 2: Smashed Chickpea:

  • ¼ cup smashed chickpeas mix small amounts of turmeric, salt, pepper, and garlic powder, OR flavor however you prefer!
  • ¼ cup arugula
  • 1 tbsp red onion
  • 5 slices cucumber

Topping 3: Ricotta & Cherry:

  • ¼ cup ricotta or whipped goat cheese
  • 3 cherries sliced
  • 1 tbsp almonds
  • 1 tsp maple syrup

Topping 4: Almond Butter & Apple:

  • 2 tbsp almond butter
  • ½ apple sliced
  • 1 tsp cinnamon
  • 1 tsp maple syrup

Instructions
 

  • Preheat oven to 425°F. Slice sweet potatoes lengthwise into ¼-inch planks. Brush or spray both sides with olive oil and sprinkle with salt.
  • Place on a baking sheet in a single layer. Roast for 20–25 minutes, flipping once halfway, until cooked through, golden, and slightly caramelized at the edges.
  • Alternatively, toast in a toaster on high setting for 2–3 rounds until cooked through.
  • While still warm, add your toppings to each sweet potato plank. Build each 'flight' topping combination side by side for presentation.
  • Serve immediately.

Turning one humble (and cheap!) sweet potato into a breakfast toast flight? Yes please. Gluten-free and delicious, plus easily customizable, there is a lot you can do with this! I chose to make my toast flight the following (in order as above:) - avocado, everything seasoning, hot sauce, egg, and tomato - hummus, cucumber, arugula, red onion and fresh squeezed lemon with salt/pepper - ricotta, cherries, drizzle of honey and sliced almonds - peanut butter, apple slices + cinnamon There are endless ideas for flavor combinations! A Latin American inspired toast, or maybe something Mediterranean. A poached egg instead of a fried one, or maybe it’s completely vegan and you add mung beans 🤍. Add banana slices, or maybe it’s another seasonal fruit. Maybe you even color code it — a green one, a blue one, yellow, a red one… I am obsessed no matter what. Notes

Slices must be even thickness for consistent cooking. Test for doneness with a fork; it should slide in easily with no resistance. Sweet potato toast also works as a snack at any time of day. Mix and match toppings as you like!
