
Sweet potato toast has been on my radar for a while and once I actually committed to making it properly, I understood all the hype immediately. The idea is simple if you are new to this gluten free swap like I was — you slice sweet potato lengthwise into planks, toast or roast them until they are cooked through with slightly caramelized edges, and then treat them exactly like you would a piece of toast. But the concept of doing flights, where you prepare a few different topping combinations at once, is where this gets really fun if you ask me!
A sweet potato toast flight is basically a little tasting board of different flavor directions all on the same base. You might do one savory like avocado toast and a soft egg. Another with almond butter, sliced apple or sliced banana, and cinnamon. Another with ricotta, cherries and almonds. The combinations are truly endless and having a few side by side makes for a really beautiful and satisfying spread. Plus, a half and half mix is never a bad option if you ask me!
The key to getting the sweet potato base right is just patience. Whether you use a toaster on a high setting, a toaster oven, or just a regular oven at a high temperature, you need to give the slices enough time to cook all the way through without burning on the outside. Thin, even slices around a quarter inch thick work best. Too thick and the inside stays dense and starchy. Too thin and they get floppy!
What I love about this recipe is that it works for any meal of the day, even though it was meant for breakfast. A savory flight works perfectly as brunch or a light lunch. A sweeter flight feels great as a wholesome snack or even dessert. And because sweet potato is naturally filling and nutrient-dense, you do not need much on top to feel satisfied!
This is also a really great recipe to make when you want something that looks impressive but requires very little active cooking time. The oven does most of the work and you just get to have fun with the toppings. I split this with my husband, so we each got a half of each, but this could also make for a great platter option in a group setting, you would just need to prep more slices! Sweet Potato Toast Flights
Equipment
- Baking sheet
- Cutting board
- Knife
Ingredients
- 2 large sweet potatoes sliced lengthwise ¼-inch thick
- Olive oil spray or brush
- Salt
Topping 1: Avocado & Everything Bagel:
- ½ avocado mashed
- Everything bagel seasoning
- Red pepper flakes
- 1 Scrambled egg
- 1 Grape Tomato sliced
Topping 2: Smashed Chickpea:
- ¼ cup smashed chickpeas mix small amounts of turmeric, salt, pepper, and garlic powder, OR flavor however you prefer!
- ¼ cup arugula
- 1 tbsp red onion
- 5 slices cucumber
Topping 3: Ricotta & Cherry:
- ¼ cup ricotta or whipped goat cheese
- 3 cherries sliced
- 1 tbsp almonds
- 1 tsp maple syrup
Topping 4: Almond Butter & Apple:
- 2 tbsp almond butter
- ½ apple sliced
- 1 tsp cinnamon
- 1 tsp maple syrup
Instructions
- Preheat oven to 425°F. Slice sweet potatoes lengthwise into ¼-inch planks. Brush or spray both sides with olive oil and sprinkle with salt.
- Place on a baking sheet in a single layer. Roast for 20–25 minutes, flipping once halfway, until cooked through, golden, and slightly caramelized at the edges.
- Alternatively, toast in a toaster on high setting for 2–3 rounds until cooked through.
- While still warm, add your toppings to each sweet potato plank. Build each ‘flight’ topping combination side by side for presentation.
- Serve immediately.
