A bright, citrusy, jewel-toned yogurt bowl inspired by a sunset palette. Thick Greek yogurt mixed with vanilla forms the creamy base, then gets layered with red dragonfruit, ruby grapefruit, and red kiwi slices. Finished with chia seeds and pistachios for crunch.

- 1 ½ cup greek yogurt
- 2 teaspoon vanilla extract or ½ teaspoon vanilla bean paste
- 1 medium red dragonfruit thinly sliced into half-moons
- 1 ruby grapefruit supremed into small segments
- 2 red kiwi sliced into thin coins
- 2 tablespoon chia seeds
- 4 tablespoons chopped pistachios
In a small bowl, mix the Greek yogurt with vanilla until smooth and glossy. Spoon into a serving bowl, keeping the center slightly swooped for visual contrast.
Arrange the dragonfruit slices along the top arc of the bowl, letting the pieces overlap slightly.
Layer the ruby grapefruit segments directly beneath the dragonfruit, keeping the colors in a gradient.
Add the red kiwi slices next to the grapefruit to complete the “sunset” spectrum.
Sprinkle chia seeds in a crescent shape along one side, then finish with chopped pistachios in a matching curve.
Serve immediately, or chill for 20 minutes if you prefer your yogurt extra cold.
If your dragonfruit is very juicy, blot lightly with a paper towel so it doesn’t bleed into the yogurt.
Swap the pistachios for hemp hearts or almonds altenatively.
A drizzle of honey or maple syrup works if you prefer a sweeter bowl.
