Sunset Greek Yogurt Bowl

This greek yogurt bowl is straight-forward, simple, and I eat something like this for breakfast on the regular for that reason. So, to mix things up, I always try to find exciting fruits to pair together. And recently, I’ve gotten my hands on some of my favorites (and in late fall with that, too of all things!). Red dragonfruit that stains your hands as you cut it, sweet yet tart ruby grapefruit that you can just smell even nearby the fruit bowl before enjoying, and a variety I don’t see around often but that I think is my favorite, the red kiwi (which leans a little more yellow than green making it perfect for this lineup). And just the visual work that this combination does can make my day feel like it was so special, even if it ultimately wasn’t a special day.

The base is just greek yogurt mixed with a little vanilla. Nothing complicated! Chia seeds and pistachios are there for contrast and added texture. They give the creamy yogurt something to stand up against. If you look at the photo, you’ll see the curve of the toppings. That shape keeps the bowl from feeling crowded, and it lets the yogurt stay visible. It’s a small detail, but it makes the final result feel thoughtful than just thrown together (and presentation is everything to me on most days!).

If breakfast usually feels rushed, this is one of those recipes that fits into the real world. The fruit can be sliced the night before. The pistachios can stay chopped in a jar. In the morning you just layer everything and eat. It also works as a light yet protein heavy afternoon snack when you want something cold and bright yet filling ahead of a later dinner time.

Sunset Greek Yogurt Bowl

A bright, citrusy, jewel-toned yogurt bowl inspired by a sunset palette. Thick Greek yogurt mixed with vanilla forms the creamy base, then gets layered with red dragonfruit, ruby grapefruit, and red kiwi slices. Finished with chia seeds and pistachios for crunch.

Equipment

  • Cutting board
  • Sharp knife
  • Small bowl for mixing yogurt
  • Serving bowl

Ingredients
  

  • 1 ½ cup greek yogurt
  • 2 teaspoon vanilla extract or ½ teaspoon vanilla bean paste
  • 1 medium red dragonfruit thinly sliced into half-moons
  • 1 ruby grapefruit supremed into small segments
  • 2 red kiwi sliced into thin coins
  • 2 tablespoon chia seeds
  • 4 tablespoons chopped pistachios

Instructions
 

  • In a small bowl, mix the Greek yogurt with vanilla until smooth and glossy. Spoon into a serving bowl, keeping the center slightly swooped for visual contrast.
  • Arrange the dragonfruit slices along the top arc of the bowl, letting the pieces overlap slightly.
  • Layer the ruby grapefruit segments directly beneath the dragonfruit, keeping the colors in a gradient.
  • Add the red kiwi slices next to the grapefruit to complete the “sunset” spectrum.
  • Sprinkle chia seeds in a crescent shape along one side, then finish with chopped pistachios in a matching curve.
  • Serve immediately, or chill for 20 minutes if you prefer your yogurt extra cold.

Notes

If your dragonfruit is very juicy, blot lightly with a paper towel so it doesn’t bleed into the yogurt.
Swap the pistachios for hemp hearts or almonds altenatively.
A drizzle of honey or maple syrup works if you prefer a sweeter bowl.
