Homemade Maple Sugar (Refined Sugar-Free)

This homemade maple sugar is made from 100% pure maple syrup and cooks down into a dry, granulated sweetener that behaves similarly to traditional sugar. It’s refined-sugar-free, subtly caramelized in flavor, and perfect for baking, meringues, and everyday use.

  • Food processor or high-speed blender

Ingredients
  

  • 1 cup pure maple syrup Grade A Amber or Dark

Instructions
 

  • Set out a heatproof bowl, whisk, and candy thermometer before you begin. Once the syrup reaches temperature, it moves quickly.
  • Pour the maple syrup into a heavy-bottom saucepan and bring to a boil over medium-high heat. Clip in a candy thermometer. Do not stir while boiling.
  • Allow the syrup to cook until it reaches 260°F (127°C). The bubbles will become tighter and more glossy as water evaporates.
  • Immediately remove the saucepan from the heat once the syrup reaches temperature.
  • Carefully pour the hot syrup into a heatproof bowl. Let it sit for 20–30 seconds to slightly cool.
  • Begin whisking vigorously by hand. The syrup will turn opaque, then thicken, and finally crystallize into a grainy, matte mass.
  • Allow the crystallized maple sugar to cool fully at room temperature until dry and firm.
  • Break the maple sugar into chunks and transfer to a food processor or blender. Pulse until finely ground. Sift if needed for an ultra-fine texture.

Notes

For baking and meringue-based recipes, grind the maple sugar very fine so it dissolves easily.
Do not pour hot syrup directly into a running mixer; this prevents proper crystallization.
If the syrup seizes too quickly, add 1–2 teaspoons of hot water, gently rewarm, and whisk again.
Maple sugar is hygroscopic. Store in an airtight container in a cool, dry place.
