
Okay. Maple Sugar, let’s get into it.
First thing’s first: Maple syrup comes from boiling maple sap directly from a tree until enough water evaporates that it concentrates the sugars. Maple syrup is about 2/3 sugar, 1/3 water. (The black forager just did a video on this actually so super recommend checking it out!!) The process of turning maple sap to maple syrup to maple sugar is truly just a process of water evaporation and increasing the concentration of sugar (aka sucrose).
The temperature that you bring the sugar to as you evaporate water out can help you figure out what your end goal texture will be. Since I want to make maple sugar and crystalize the sugar into a sandy texture, the goal was to get it to 260F (127C so google tells me). Don’t go any higher because that is when it will start to burn, and you don’t wanna end up with burnt sugar. It should be nicely caramelized, a deep caramel color.
Once you remove the boiled down syrup from the heat, to make maple sugar you essentially need to begin stirring/whipping it aggressively af (aka use a mixer!) so that as it crystalizes (which does happen pretty quick) you get small or fine crystal formations instead of big pieces. Big pieces = maple candy, by the way! Small pieces = sugar you can bake with. If you do accidentally get big pieces though, just let it cool, then take it to a food processor to break it down further. I had to do that too because I started too slow, you live and you learn!
But okay… that was all the what/how. Now, the WHY. WHY not just use normal sugar, or even just spend the money on pre-packaged maple sugar. Which, let me be the first to say that I have done both many times, and both options are totally okay/lovely too.
Refined white sugar is 100% sucrose. Meaning all you get is pure sugar. Maple sugar on the other hand still contains the plant compounds and minerals that came from the original sap it once was – things like manganese (supports collagen production, helps aid in nutrient absorption, helps regulate blood sugar which is super key when pairing it with sucrose), and small amounts of zinc and even antioxidants! It is still sugar, and it does still spike your blood sugar. But if you’re eating sugar, eating a kind of sugar that comes with added benefits and spikes your blood sugar the least is the way to go, and that’s why I love maple! (Also could I have said the word sugar in that explanation more? negative).
You can also buy maple sugar from specialty or health stores, but what I have found is that financially, it’s just wayyyyy to expensive in comparison to making it yourself. A quart jug (4 cups) of high quality organic maple syrup at the Costco down the road from me is $13. At my Aldi, a 1.5 cup amount of maple syrup is $4.50. The cheapest I have ever seen a bag of pre-made organic maple sugar ever sold is $15 for a 1 cup serving.
And since maple syrup and maple sugar is 1:1 (meaning 1 cup of maple syrup boils down and whips up to 1 cup of maple sugar), paying $60 for someone to do it for me vs $13 to do it myself at the end of the day is math that ain’t mathing for me (but like you do you if you have a baller budget!).
Since it’s easy to accomplish on your own, why take the fun step out of the baking process as you seek out healthier options? The more you know!

Homemade Maple Sugar (Refined Sugar-Free)
Equipment
- Heavy-bottom saucepan
- Candy thermometer
- Heatproof bowl (metal preferred)
- Whisk or sturdy spoon
- Food processor or high-speed blender
- Fine-mesh sieve (optional)
Ingredients
- 1 cup pure maple syrup Grade A Amber or Dark
Instructions
- Set out a heatproof bowl, whisk, and candy thermometer before you begin. Once the syrup reaches temperature, it moves quickly.
- Pour the maple syrup into a heavy-bottom saucepan and bring to a boil over medium-high heat. Clip in a candy thermometer. Do not stir while boiling.
- Allow the syrup to cook until it reaches 260°F (127°C). The bubbles will become tighter and more glossy as water evaporates.
- Immediately remove the saucepan from the heat once the syrup reaches temperature.
- Carefully pour the hot syrup into a heatproof bowl. Let it sit for 20–30 seconds to slightly cool.
- Begin whisking vigorously by hand. The syrup will turn opaque, then thicken, and finally crystallize into a grainy, matte mass.
- Allow the crystallized maple sugar to cool fully at room temperature until dry and firm.
- Break the maple sugar into chunks and transfer to a food processor or blender. Pulse until finely ground. Sift if needed for an ultra-fine texture.
Notes
Do not pour hot syrup directly into a running mixer; this prevents proper crystallization.
If the syrup seizes too quickly, add 1–2 teaspoons of hot water, gently rewarm, and whisk again.
Maple sugar is hygroscopic. Store in an airtight container in a cool, dry place.
