The base uses your leftover date caramel, cooked down with maple syrup and coconut sugar until it reaches the classic hard-ball stage — forming a glossy, snappy shell around crisp green apples. - 2 green apples Granny Smith or other tart variety
- ½ cup date caramel easy recipe above!
- ¼ cup maple syrup
- 3 tablespoons coconut sugar
- 1 tablespoon coconut oil
- Pinch sea salt
- ½ teaspoon vanilla extract
Toppings (optional):

Wash and dry apples completely (moisture will prevent the caramel from sticking). Insert wooden sticks or skewers into the top. Set on parchment paper.
In a small, heavy-bottomed saucepan, combine the date caramel, maple syrup, coconut sugar, coconut oil, and salt.
Heat over medium, stirring constantly until the mixture begins to bubble evenly.
Continue to cook the caramel, stirring frequently, until it reaches 250–255°F (hard-ball stage) on a candy thermometer — this ensures it will set firm and crisp when cooled.
(If you don’t have a thermometer, drop a small bit into cold water — it should form a firm but pliable ball.)
Once it reaches temperature, remove from heat and stir in the vanilla. Let the caramel rest 1–2 minutes to slightly thicken but remain pourable.
Working quickly, tilt the pan and roll each apple through the caramel, coating evenly. Let any excess drip off.
Optionally, roll in toppings before the coating sets.
Place on parchment and allow to cool completely at room temperature (15–20 minutes) until the coating hardens to a glossy shell.
If your caramel starts to firm too quickly while dipping, reheat gently for 20–30 seconds over low heat to loosen.
For an extra crackly finish, pop the coated apples into the fridge for 5 minutes once they’ve cooled slightly.
The coating will stay crisp for about 24 hours — best enjoyed the same day!
