When your potato salad is as loved and dreamy as Taylor Swift’s engagement 💍— 😂😅 But seriously, this potato salad is for the people. Meatless, dairy free (aka vegan!), and gluten free / soy free / peanut free… all the things, yet still incredible enough you won’t be taking any home with you if you bring it to a Labor Day weekend party or festivities. #SwiftieApproved #labordayweekend #holidayweekend #taylorandtravis

Notes

Chilled potatoes work best here. They hold their structure and absorb the dressing without turning mushy.
If the salad thickens after chilling, stir in a splash of water or lemon juice to loosen it.
Optional add-ins include chopped celery for crunch, capers for a briny note, or diced cucumber for freshness.
