Bolted Broccoli Flower Lemon Linguine

A late-spring pasta built around broccoli bolts, the flowering tops that shoot up when broccoli goes to seed. Slightly bitter, a little grassy, and genuinely pretty. Aglio e olio at heart, brightened with lemon and finished with the blooms themselves.

Ingredients
  

  • 7 oz linguine 200g + salt for pasta water
  • 2 cups broccoli bolts mostly florets and flowers
  • 4 garlic cloves sliced
  • 4 tbsp extra virgin olive oil
  • 1 lemon zest and juice
  • ½ tsp chili flakes optional
  • ½ cup reserved pasta water
  • 1 tsp salt
  • ½ tsp freshly cracked black pepper
  • ¼ cup reserved broccoli bolt flowers the prettiest ones, save these
  • 2 tbsp pecorino or parmesan finely grated (omit for vegan/dairy-free)
  • Drizzle of good olive oil

Instructions
 

  • Bring a large pot of water to a boil. Salt it generously, it should taste like the sea. This is where your pasta gets its base flavor, so don't hold back!
  • Sort through your broccoli bolts. Pull off the prettiest open flowers and set them aside; those go on cold at the very end. Everything else (a small amount of the stems, then the buds, smaller florets) goes into the pan.
  • Cook the linguine according to package directions until just al dente. Before draining, scoop out at least ½ cup of pasta water. Drain and set aside.
  • While the pasta cooks, warm the olive oil in a wide skillet over medium-low. Add the garlic and chili flakes. Cook slowly until the garlic turns pale gold and fragrant, about 4 minutes. If it's moving fast, pull the heat down.
  • Add the bolt stems and florets to the pan. Toss to coat in the oil, add a splash of pasta water, and cook for 2–3 minutes until bright green and just tender with some bite left.
  • Add the drained pasta directly to the skillet. Pour in the remaining pasta water a little at a time, tossing constantly. Add the lemon zest first, then the juice. Keep tossing until the sauce is glossy and clings to the noodles. Taste and adjust salt and lemon as needed.
  • Twirl into bowls. Scatter the reserved flowers over the top. Finish with cheese (if using), a drizzle of olive oil, and a crack of black pepper. Serve immediately.

Notes

Substitutions: No broccoli bolts? Broccolini is the closest swap and works beautifully, you just won't have the flowers for garnish. Regular broccoli broken into small florets also works.
Pasta water is not optional. The starch is what makes the sauce creamy and cohesive without any cream. Add it gradually and keep tossing - you're building an emulsion, not just loosening things up.
Best eaten immediately. Leftovers reheat okay with a splash of water in a pan over low heat, but the flowers won't make it; grab fresh ones from the plant if you have them.
