
Strawberry lemon tiramisu is one of those desserts that feels completely unexpected until you taste it and then it makes complete sense. The classic tiramisu formula — that layered, creamy, cloud-like structure — is incredibly versatile, and this spring version swaps the coffee and cocoa for fresh strawberries and bright lemon in a way that is genuinely stunning. The base follows the tiramisu method closely. Ladyfinger biscuits soaked in a flavored liquid, layered with a creamy mascarpone filling, and chilled until everything sets into something sliceable and cohesive. Here, the soaking liquid is made from fresh lemon juice and a little sugar syrup rather than espresso, which gives the ladyfingers a bright, citrusy flavor that plays beautifully against the richness of the mascarpone.
The mascarpone cream is lightened with whipped cream and sweetened with a little powdered sugar and vanilla. Lemon zest stirred through adds fragrance and keeps the citrus theme running throughout every layer. Between the layers of cream and soaked ladyfingers, fresh sliced strawberries add color, sweetness, and a juicy contrast that makes every bite feel alive.
Now, the KEY to a great tiramisu of any kind is PATIENCE. It needs time in the fridge (at least 4 hours but overnight is better). That resting time is what allows the flavors to meld, the ladyfingers to soften completely, and the whole structure to set up so it slices beautifully. Strawberry Lemon Tiramisu
Equipment
- 8×8 inch (or similar) square baking dish
- Electric mixer or hand whisk

Ingredients
For the Strawberry Syrup:
- 2 cups fresh strawberries hulled and sliced
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 tablespoon fresh lemon juice
For the Lemon Mascarpone Cream:
- 8 ounces mascarpone cheese room temperature
- 1 cup heavy whipping cream cold
- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest plus extra for garnish
- 1 teaspoon vanilla extract
For Assembly:
- About 24 ladyfinger cookies savoiardi
- 1 cup sliced fresh strawberries for layering
- Extra sliced strawberries and lemon zest for garnish
Instructions
- In a medium saucepan over medium heat, combine the sliced strawberries, granulated sugar, water, and lemon juice. Bring to a simmer and cook for about 5–7 minutes, stirring occasionally, until the strawberries break down and the syrup thickens slightly.
- Remove from heat and strain through a fine mesh sieve into a shallow bowl, pressing on the solids to extract the juices. Discard solids and let the syrup cool to room temperature.
- In a large mixing bowl, beat the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream, powdered sugar, lemon juice, lemon zest, and vanilla extract until medium-stiff peaks form. Gently fold the whipped cream into the mascarpone until fully combined and smooth.
- Quickly dip each ladyfinger into the cooled strawberry syrup (don’t soak too long or they’ll get mushy) and arrange a layer on the bottom of your dish.
- Spread half of the lemon mascarpone cream over the ladyfingers. Top with a layer of sliced fresh strawberries.
- Repeat with another layer of dipped ladyfingers, then the remaining mascarpone cream. Smooth the top with an offset spatula.
- Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the layers to set.
- Just before serving, top with more sliced strawberries and extra lemon zest for a fresh, beautiful finish. Slice and enjoy!

Keep leftovers covered in the fridge for up to 2–3 days (but good luck having any left!).
