
Fresh tomatoes are a simple pleasure and something I gravitate towards when I am seeking a bite of summer. And while it’s not yet summer, in my head I am on my way there. For that, this tomato salad was calling my name. It’s fast, but it doesn’t taste like a shortcut. That comes down to a few small decisions that make a big difference.
First, keep the tomatoes as the main character. They are *the salad base* instead of leafy greens here. Grape tomatoes are perfect here because they’re consistently sweet and hold their shape. When you halve them and hit them with a little salt and lemon, they start releasing their juices almost immediately. Give it five or ten minutes and suddenly you’ve got this glossy, flavorful base that coats everything else in the bowl.
Then it’s all about elevating with a little contrast. The cucumber brings that clean, watery crunch. Radishes add a little bite without overpowering anything. And since this is THE Herby Eater, fresh herbs aren’t optional. Basil is doing most of the work (which let me note here that you can always add more in if you want – I actually did in the photographed version to be fair!), but parsley and chives round it out and make it feel fuller, greener, more alive. [No chives? Swap in green onion.]
The dressing is a play on my ultimate favorite homemade noochy dressing, and it’s because I wanted it to be more garlic forward. I kept it simple and noted where you can make changes, but it pairs so nicely here that I just know it’ll be a go to all on its own.
It works as a side, as a salad all on its own, as a appetizer or genuinely a quick thrown together I have no time to do this kinda meal prep before going to work in the morning, and we all need an old faithful like this for those times. OH – last thing, feel free to add a protein on top!

Grape Tomato Basil Garlic Salad (with Radish & Cucumber)
Equipment
- Cutting board
- Sharp knife
- Mixing bowl
- Small bowl or jar (for dressing)
- Spoon or whisk
Ingredients
Salad Base:
- 2 cups grape tomatoes halved (majority base)
- 1 cup cucumber sliced into thin half moons
- 3 radishes thinly sliced
- ½ cup fresh basil torn
- 2 tablespoons fresh parsley chopped
- 2 tablespoons fresh chives or green onion finely sliced (optional but recommended)
Garlic Lemon Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 small garlic clove very finely grated or minced
- 1 teaspoon maple syrup or honey
- ½ teaspoon Dijon mustard optional, for emulsifying
- ½ teaspoon salt plus more to taste
- Fresh cracked black pepper
Optional Add-Ins:
- ¼ cup crumbled feta or vegan feta
- 2 tablespoons toasted pine nuts or chopped pistachios
- 2 tablespoons nutritional yeast for a savory, cheesy vibe
- 1 tablespoon red wine vinegar for extra tang
- Thinly sliced shallot ¼ small
Instructions
- Halve the grape tomatoes, slice the cucumber into thin half moons, and thinly slice the radishes. Add everything to a large mixing bowl.
- Tear the basil and chop the parsley and chives. Add to the bowl with the vegetables.
- In a small bowl or jar, whisk together olive oil, lemon juice, lemon zest, garlic, maple syrup, Dijon (if using), salt, and black pepper until well combined.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
- Add any optional ingredients like feta, nuts, or nutritional yeast. Toss lightly again.
- Let the salad sit for 5–10 minutes before serving to allow the tomatoes to release their juices and create a natural sauce.
- Add more salt, lemon, or olive oil as needed before serving.
Notes
If making ahead, add herbs right before serving to keep them fresh.
This gets better as it sits (up to a few hours), but best eaten same day.
Serve with crusty bread, over grains, or alongside anything grilled.
