
Raw asparagus? What? Yes. Most of us only ever eat it roasted, or sautéed, or grilled, but when asparagus is fresh and thin, it’s actually incredibly good raw. It has a crisp bite and a brightness that cooked asparagus definitely loses.
This salad keeps things very simple (on purpose) so the asparagus stays the star. Add in lemon zest to wake everything up, pistachios for a buttery crunch, and pecorino for salty depth and everything slowly but surely begins to feel tied together like a perfect little bite. And it’s quick, which is critical to me eating healthy some days.
The key is starting with good asparagus. Look for spears that are firm and vibrant green with tight tips. If they’re thin, they’ll already be tender enough to eat raw without any extra work. If they’re thicker, shaving them into ribbons works well and gives the salad a softer texture. Either way, trimming the woody ends is important, so noooo skipping!!
Once the asparagus is prepped, the dressing is just lemon juice, lemon zest, and good olive oil. (Feel free to also add my faves nooch, salt, pepper to the dressing party too though if you like). The lemon will slightly softens the asparagus while keeping it crisp and fresh. After tossing everything together, the pistachios add texture and the pecorino brings the salty, nutty flavor that balances the brightness of the lemon.
Because the ingredients are so simple, quality matters. Freshly grated pecorino makes a noticeable difference, and good olive oil helps everything taste fuller and rounder. OH, and the pistachios should be roughly chopped so you get a mix of smaller bits and larger pieces throughout the salad!
Before I wrap this up to get you to the good part (the recipe), lets talk use case. It’s light enough to serve as a starter, but it also makes a great side dish alongside roasted vegetables, pasta, or grilled bread. It’s especially nice in spring when asparagus is at its peak and most delicate. If you want to change it slightly, there are a few easy options. A handful of shaved fennel or thinly sliced radish adds extra freshness and flavor change. Fresh herbs like parsley, dill, or mint work well too. Even a drizzle of honey or maple can soften the lemon slightly if you prefer a rounder flavor.
At its core though, this salad is about letting asparagus shine in its raw form, which I feel like rarely happens. When it’s fresh and handled simply, it doesn’t need much else. And you’re gonna love that, I promise.

Raw Asparagus Salad with Lemon, Pistachios & Pecorino
Equipment
- Vegetable peeler or sharp knife
- Cutting board
- Small mixing bowl
- Large mixing bowl
- Microplane or fine grater
Ingredients
- 1 large bunch fresh asparagus about 1 lb, woody ends removed
- 1 lemon zested and juiced
- 2 tbsp extra virgin olive oil
- ⅓ cup shelled pistachios roughly chopped
- ½ cup finely grated pecorino cheese
- ½ tsp flaky sea salt or to taste
- ¼ tsp freshly cracked black pepper
Instructions
- Trim off the woody ends of the asparagus. Using a vegetable peeler, shave the asparagus into thin ribbons. If preferred, you can thinly slice them on a diagonal with a knife.
- In a small bowl, whisk together the lemon juice, lemon zest, and olive oil.
- Place the shaved asparagus in a large bowl. Pour the lemon dressing over the top and toss gently to coat.
- Sprinkle in the chopped pistachios and grated pecorino.
- Add flaky sea salt and cracked black pepper. Toss lightly once more.
- Transfer to a serving plate and finish with an extra pinch of lemon zest, pistachios, and pecorino if desired. Serve immediately.
Notes
If your asparagus spears are very thick, shaving works especially well.
For extra brightness, add a few torn mint leaves or a drizzle of honey.
Best enjoyed fresh, but the asparagus will soften slightly if it sits for 10–15 minutes in the lemon dressing.
