Irish Cheddar Cabbage & Potato Skillet

St Patricks Day, at least to me, is nothing without Potatoes and Cabbage on the table. This cabbage and potato skillet is exactly that. Thin shredded cabbage, freshly grated potato, andddd of course balance of sharp Irish cheddar cooked together into a sliceable skillet that’s crispy on the bottom and tender in the center.

It lands somewhere between a hash brown, a rösti, and a rustic cabbage pie. The potatoes hold everything together while the cabbage softens and sweetens as it cooks. The cheddar melts through the vegetables and adds that salty, sharp bite that makes you want another slice.

The key here is cutting everything thin. The cabbage should be finely shredded and the potatoes freshly grated so they cook through evenly. Once everything hits the skillet, resist the urge to stir. Let the bottom form a crust first, then finish it in the oven so the center cooks all the way through. After a short rest, the whole skillet slices into wedges like (and this is my favorite way to put it) a savory cake.

This is the kind of recipe that works as a main dish with a simple salad, or as a hearty side alongside roasted vegetables or eggs. Of course this is depending on when you want to enjoy it (breakfast? lunch? maybe possibly a dinner side? You pick!).

There are three things that make this skillet hold together and slice cleanly. First, the freshly grated potato releases starch as it cooks. That starch acts as a natural binder. Second, sharp cheddar melts and sets, helping the vegetables hold together once the skillet cools slightly. Third, finishing in the oven ensures the potatoes in the center cook completely. If you try to cook a thick skillet entirely on the stovetop, the outside can brown before the middle is tender.

The oven solves that problem. NOW, on to tips for success:

  • Shred everything thin. Thin cabbage cooks faster and blends into the potato instead of staying stringy.
  • Press the mixture into the pan. This helps it form a cohesive layer and gives you that crispy base.
  • Don’t rush the first stage. Let the skillet sit undisturbed so the bottom develops color.
  • Let it rest before slicing. Ten minutes makes a big difference. The starch and cheese firm up, and the wedges hold their shape.

Easy ways to change it up:

This skillet is simple, which means it’s also easy to customize.

  • You can add sautéed leeks or shallots for a slightly sweeter flavor.
  • A little whole grain mustard stirred into the mix gives it a subtle tang.
  • Fresh dill or chives on top brightens the whole dish.

If you want extra texture, serve it with a crisp green salad or a spoonful of mustard, sour cream or yogurt on the side. But honestly, the cabbage, potato, and cheddar combination already does most of the work. It’s cozy, simple, and you are gonna love it!

Equipment

  • 10–12 inch oven-safe skillet (cast iron works best)
  • Box grater or food processor
  • Spatula

Ingredients
  

  • 2 cups green cabbage very thinly shredded
  • 2 medium Yukon gold potatoes freshly grated
  • 1 cup sharp Irish cheddar freshly grated
  • 2 tablespoons butter or olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 small garlic clove finely grated (optional)
  • Fresh chives or parsley
  • Extra grated cheddar
  • Cracked black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl combine shredded cabbage, grated potato, grated cheddar, salt and pepper, garlic (if using). Toss until everything is evenly mixed.
  • Place an oven-safe skillet over medium heat and add the butter or oil.
  • Once hot, spread the cabbage and potato mixture evenly in the skillet, pressing it down firmly with a spatula so it forms a compact layer.
  • Cook 8–12 minutes without stirring, allowing the bottom to develop a golden crust and the vegetables to begin softening.
  • Press the mixture down again gently to help it hold together.
  • Transfer the skillet to the oven and bake for 15–20 minutes, until the potatoes in the center are tender and cooked through.
  • Remove from the oven and allow the skillet to rest for 10–15 minutes. This helps the potato starch and melted cheese set so the skillet can be sliced cleanly.
  • Cut into wedges and serve warm. Finish with fresh herbs, cracked black pepper, or extra cheddar if desired.

Notes

Freshly grated potato works best. Pre-shredded potatoes are often too dry and won’t bind as well.
If the skillet mixture seems very wet, lightly squeeze the grated potato before mixing.
For extra crispiness, you can briefly place the skillet under the broiler for 2–3 minutes after baking.
