Cheesecake without the full cheesecake commitment is definitely my kind of cheesecake. Yes, I said cheesecake 3 times, no I am not changing that, I stand behind it.
These mini passionfruit cheesecake bites are light, creamy, tangy, and just sweet enough. They look impressive while being soooo easy. They taste bright and fresh. And they don’t leave you feeling weighed down.
The filling is simple: cottage cheese, low-fat cream cheese, fresh passionfruit, and maple syrup. That’s it. When blended properly, cottage cheese turns completely smooth. No curds. No texture issues. Just a thick, creamy base with a protein boost that makes these feel a little more balanced than your average dessert bite.
A few things matter here. First, blend the cottage cheese on its own before adding the cream cheese. This guarantees a silky texture. If you rush this step, you’ll still see small curds. Blend until completely smooth, then add everything else.. and by everything else I mean add your low fat cream cheese, your passionfruit, and then to taste add maple.
Third, chill time helps. The filling firms up in the fridge and settles into the phyllo shells. Thirty minutes is enough, but an hour is better if you have it.
The mini phyllo shells are doing a lot of work here. They give you crunch without needing a traditional graham cracker crust. They also portion everything naturally. One bite feels intentional. Two or three feels satisfying.
These are best assembled the day you serve them. The shells will soften slightly over time from the moisture of the filling. If you want to prep ahead, you can make the filling up to two days in advance and store it in the fridge. Just fill and top before serving.
Nutritionally, each bite lands around 70 to 75 calories with ~4 grams of protein. If you have 3, that’s roughly 10 to 12 grams of protein from something that still feels like dessert. That’s a win in my book!
These are perfect for spring gatherings, baby showers, brunch spreads, or honestly just a Tuesday when you want something sweet but fresh… but that might just be me.
