Savory Greek Yogurt Bowls with Roasted Veggies & Lentils

Savory yogurt bowls were a part of my plan for going refined sugar free for the New Year, which, yes I have found balance since that idea if you were wondering! I know yogurt is usually a sweet breakfast territory thing (hence no sugar swaps), but the savory version is genuinely so good and I think it deserves way more attention than it gets. This particular combination with roasted vegetables and lentils is hearty, protein-rich, and satisfying in a way that a bowl of granola just cannot compete with. Like, truly and wholly!

The base is thick plain Greek yogurt, which works as a creamy, tangy foundation for everything that goes on top. It is high in protein, rich in texture, and it pairs beautifully with the warmth of roasted vegetables and the earthiness of lentils. The contrast between cold creamy yogurt and warm toppings is part of what makes this so good as well. Do not warm the yogurt (because why complicate and just why in general). That temperature difference is intentional and it works!

For the vegetables, roast whatever you have on hand. I tend to go for things like cherry tomatoes, red onion, and bell peppers and garlic because they caramelize beautifully and add a lot of flavor without much effort. Season them well with olive oil, salt, pepper, and whatever spices feel right. Cumin, smoked paprika, and garlic powder are a great combination here and they tie the whole bowl together.

The lentils are what push this into a full meal. They add substance, fiber, and plant-based protein that keeps you satisfied for hours. If you have cooked lentils in the fridge already (or bought the premade pack from trader joes), this comes together incredibly fast. If not, they cook in about 20-25 minutes on the stove and are very much worth the time.

Finish with a drizzle of good olive oil, some fresh herbs, maybe a pinch of chili flakes or a squeeze of lemon, and you have a bowl that looks beautiful and tastes even better. I have made it as a satisfying lunch, a light dinner, a perfect start to the day breakfast, AND an impressive brunch option, so any meal time is a good meal time! Savory Lentil & Roasted Veggie Yogurt Bowl

Warm roasted veggies and lentils over cold garlicky yogurt, finished with chili crisp and a mountain of parsley. Savory yogurt bowls are having a moment!

Ingredients
  

  • 1 red bell pepper sliced (about 150g)
  • 1 cup cherry tomatoes halved (about 150g)
  • 1/2 red onion sliced (about 85g)
  • 3 garlic cloves unpeeled
  • 2 tbsp olive oil 30ml
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked lentils about 200g, warmed
  • 1 cup plain Greek yogurt about 240g
  • 1 small garlic clove grated
  • 1 tbsp lemon juice 15ml
  • 1/4 tsp salt
  • 2 tbsp chili crisp 30–45g
  • 1/4 cup parsley roughly chopped (about 10g)
  • Flaky salt to taste

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Toss the bell pepper, cherry tomatoes, red onion, and unpeeled garlic cloves with olive oil, salt, and pepper on a sheet pan.
  • Roast for 20–25 minutes, until the veggies are charred at the edges and the tomatoes have blistered.
  • While the veggies roast, squeeze the roasted garlic cloves out of their skins and mash into a paste.
  • Stir the grated raw garlic, roasted garlic paste, lemon juice, and salt into the Greek yogurt. Spread across the base of two bowls.
  • Warm the cooked lentils and spoon over the yogurt.
  • Top with the roasted veggies.
  • Finish with chili crisp, parsley, and a pinch of flaky salt.

Notes

Substitution: Swap Greek yogurt for cottage cheese (blended smooth or left textured, your call!). This makes it a slightly different vibe but keeps it vegetarian and gluten-free!
Optional add-ins: crumbled feta, toasted pepitas, a soft-boiled egg.
Storage: Components keep separately for 3–4 days. Assemble fresh, as the yogurt gets watery if it sits under warm veggies too long.
