Cajun Breakfast Casserole

Some Christmas mornings are all cinnamon rolls and powdered sugar. Others need something savory, grounding, and just a little spicy. This Cajun breakfast casserole falls squarely in the second camp, and I think is deserving of sitting right next to the cinnamon rolls on the biggest morning of the year.

It’s the kind of dish, like our favorite cinnamon rolls, that makes the kitchen smell incredible before anyone is fully awake. Potatoes on the bottom. Soft, almost custardy eggs. Bits of spicy plant-based sausage tucked between peppers, onion, tomato, and spinach. Sharp cheddar and nutritional yeast bring richness without weighing it down. A hit of Cajun seasoning and hot sauce keeps things interesting and surprising. This is a breakfast that feels celebratory but still practical. No standing at the stove flipping anything. No last-minute scrambling while coffee gets cold. It’s just ready to bake, pull out of the oven and enjoy!

First, my favorite thing is that it’s make-ahead friendly. You can assemble the entire casserole the night before, cover it, and slide it into the fridge. In the morning, all you have to do is bake. Second, it feeds a group without stress. An 8×8 pan comfortably serves 9 square portions, or in my experience ~6-8 people depending on who wants seconds available after their first portion, and slices cleanly thanks to the extra eggs. It holds its shape, reheats well, and doesn’t fall apart on the plate.

Third, it balances flavor without going overboard. Cajun seasoning brings warmth, not spicy heat for heat’s sake. Greek yogurt keeps the eggs tender. Cheddar adds familiarity. The vegetables keep everything from feeling heavy first thing in the morning. and if you know me, you know that I’m adding as many veggies as I can!

If you’re using frozen shredded potatoes, which you absolutely can if you don’t wanna add an arm workout into the morning routine while making, make sure they’re fully thawed and squeezed dry. Extra moisture is the fastest way to a watery casserole. As a secondary note as well, if your Cajun seasoning contains a lot of salt, ease back slightly on the added salt in the recipe. You can always finish with a pinch at the table (always easier to add later than try to take away from a salty egg bake).

Let the casserole rest for at least ten minutes after baking. This helps it set and makes slicing much cleaner! Then, finish the casserole with plenty of chopped parsley and green onion right before serving. A squeeze of fresh lime brightens everything up and cuts through the richness in the best way. Set out hot sauce at the table and let everyone decide how bold they want to go. A simple citrus fruit salad or a bowl of sliced oranges on the side is all you really need.

While this is perfect for Christmas morning, it’s just as good for a weekend brunch, meal prep, or a savory breakfast-for-dinner situation. Leftovers reheat beautifully and even work tucked into a warm tortilla for a next-day breakfast wrap. If you’re someone (like me) who leans savory over sweet in the morning, this one’s for you. Shredded potatoes form the base, baked with eggs, Greek yogurt, vegetables, nutritional yeast, sharp cheddar, and spicy plant-based sausage. Using eight eggs creates a custardy, protein-forward bake that slices cleanly and holds beautifully.

Ingredients
  

Casserole:

  • cups shredded potato freshly shredded or thawed frozen, excess moisture squeezed out
  • 8 large eggs
  • ¾ cup plain Greek yogurt
  • cups sharp cheddar cheese shredded
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon dried oregano
  • 3 tablespoons nutritional yeast
  • ¾ teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1-2 teaspoons hot sauce to taste
  • 1 tablespoon olive oil
  • 1 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • cups diced tomato seeds removed if very juicy
  • cups fresh spinach chopped
  • cups spicy plant-based sausage crumbled

Toppings:

  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons sliced green onion or scallion
  • Lime wedges optional
  • Extra hot sauce optional

Instructions
 

  • Preheat the oven to 375°F. Lightly grease an 8×8-inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté for 5–6 minutes until softened.
  • Add the garlic and plant-based sausage. Cook for another 4–5 minutes, breaking up the sausage until heated through and lightly browned.
  • Stir in the diced tomato and spinach and cook just until the spinach wilts. Remove from heat.
  • In a large mixing bowl, whisk together the eggs, Greek yogurt, cheddar cheese, Cajun seasoning, oregano, nutritional yeast, garlic powder, salt, pepper, and hot sauce until fully combined.
  • Spread the shredded potato evenly in the bottom of the prepared baking dish.
  • Spoon the vegetable and sausage mixture evenly over the potatoes.
  • Pour the egg mixture over everything, gently pressing down so the liquid distributes evenly.
  • Bake uncovered for 45–50 minutes, or until the center is set and the top is lightly golden.
  • Let rest for 10 minutes before slicing.
  • Finish with chopped parsley and green onion. Serve with lime wedges and extra hot sauce if desired.

Notes

For extra golden edges, place the dish on the lower oven rack.
If your Cajun seasoning is salty, reduce the added salt slightly.
This casserole can be assembled the night before and baked fresh in the morning!
