Beet Wellington

If you want a show-stopping vegetarian (or vegan!) main that feels super special without a ton of steps, this Beet Wellington is it. Roasted beets, a quick mushroom mixture, and store-bought puff pastry come together in a way that looks far fancier than the effort it takes. This is the kind of dish you can make when you want something beautiful on the table, so let’s talk about it.

I made this after roasting a batch of beets and realizing how perfectly they fit inside a sheet of puff pastry. Once they’re roasted and cooled, the rest moves fast. The pastry wraps around the beets in one snug roll and the oven does all the work. The result slices cleanly with that deep red color in the center and golden pastry on the outside.

If wrapping a Wellington feels intimidating, here’s the simplest way to think about it.

  1. Lay the puff pastry out flat.
  2. Spread Dijon mustard in the center to create a base.
  3. Line up the beets in a row.
  4. Spoon the mushroom mixture over the top and gently press it around the sides.
  5. Fold the long sides of the pastry in first.
  6. Fold the top and bottom edges over like you’re closing a present.
  7. Flip it seam-side down.

That seam on the bottom helps the Wellington hold its shape as it bakes.

A short chill in the refrigerator before baking helps the pastry puff nicely and prevents sliding. Even ten minutes makes a difference!

After baking and cooling, when you slice the finished Wellington, you’ll see a round red center with a thin layer of savory mushrooms and crisp pastry all around. Even if the mushroom layer looks thinner than expected, that’s normal. Mushrooms cook down a lot, and beets shrink slightly as they roast. The flavor and texture are right where they should be.

This goes well with roasted vegetables or sautéed spinach, a little salad, or even just a small bowl of vinaigrette or balsamic glaze on the side. Anything bright or acidic balances the richness of the pastry.
