Mushroom Lentil Stuffed Cabbage Rolls

I know what you are thinking: cabbage rolls? Not for me. But I am telling you, these babies are for you, and you will love them. Mushroom lentil stuffed cabbage rolls are minimal on purpose; mushrooms for depth, lentils for substance, onion and celery for softness, paprika for warmth, and nutritional yeast to round everything out. And the cabbage becomes the unsung hero. Once it’s blanched and pliable, it turns into the perfect wrapper. Neutral, tender, and sturdy enough to hold its shape without stealing attention from the filling.

Before serving, I like to take one extra step that changes everything. A quick pan-fry with just a spray or two of avocado oil gives the rolls a little color and a faint crisp on the outside. Not crunchy. Just golden! Instead of a heavy tomato sauce, these get finished with a light homemade vinaigrette. A drizzle, not a pour. The acidity wakes everything up and keeps the dish from feeling weighed down. It also makes leftovers better, which matters.

These Mushroom Lentil Stuffed Cabbage Rolls are intentionally simple and deeply savory. The filling relies on just mushrooms, lentils, onion, celery, paprika, and nutritional yeast for flavor. After baking until tender, the rolls are lightly pan-fried in a quick spray of avocado oil to add golden color, then finished with a light homemade vinaigrette.

Ingredients
  

For the Cabbage Rolls

  • 1 large green cabbage
  • 1 tablespoon olive oil
  • 1 small yellow onion finely chopped
  • 1 stalk celery finely chopped
  • 8 oz mushrooms finely chopped
  • 1 cup cooked green or brown lentils
  • 2 tablespoons nutritional yeast
  • 1 teaspoon paprika
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper

For Finishing

  • Avocado oil spray
  • Light homemade vinaigrette optional, for serving

Instructions
 

  • Bring a large pot of salted water to a boil. Remove the core from the cabbage and carefully place the head into the water. Cook for 5–7 minutes, gently peeling off outer leaves as they soften. Set leaves aside to cool. Trim thick ribs if needed.
  • Heat olive oil in a large skillet over medium heat. Add onion and celery and cook for 4–5 minutes until softened. Add mushrooms and cook until they release their moisture and begin to brown, about 6–8 minutes.
  • Stir in lentils, nutritional yeast, paprika, salt, and pepper. Cook for 2–3 minutes until fully combined. Remove from heat.
  • Place 2–3 tablespoons of filling in the center of each cabbage leaf. Fold in the sides and roll tightly, seam-side down.
  • Preheat oven to 350°F (175°C). Arrange cabbage rolls snugly in a baking dish. Cover tightly with foil and bake for 40–45 minutes, until cabbage is tender and rolls are heated through.
  • Heat a large skillet over medium heat and lightly coat with avocado oil spray. Add cabbage rolls seam-side down and cook for 1–2 minutes per side, just until lightly golden.
  • Transfer to plates and drizzle lightly with homemade vinaigrette if desired. Serve warm.

Notes

Pan-frying adds texture and visual contrast without drying the rolls out.
Keep the oil minimal—this step is about color, not crisping.
Add vinaigrette right before serving for the freshest flavor.
