
I grew up in the south (South Carolina low country to be exact), but I never had polenta until I was an adult. Both of my parents were freshly arriving northerners when they moved to have kids and start a business, so I didn’t grow up with typical foods and customs of the south like a lot of my peers.
Still, once I had polenta, I realized just how awesome it really was. A solid base to so many different flavor components (like the grown-up version of grits in a lot of ways), and yet its still a hugely budget friendly option for ballers like me.
This version, a pumpkin polenta, is that kind of recipe; comforting without being heavy, practical enough for tight budgets and weeknight meal times. The roasted balsamic beets bring brightness and depth, balancing the earthy creaminess of the polenta with a bit of tang and sweetness. Plus a little parsley on top for good measure never hurts either.
Polenta is often treated like a side, but here it holds its own. Pumpkin purée blends in effortlessly, adding both nutrition and a velvety finish. You don’t need cream or cheese to make this satisfying, though a sprinkle of nutritional yeast (or parmesan for those not vegan) doesn’t hurt. The texture should be soft but not soupy, with the kind of slow-cooked feel known and loved.
The beets roast simply: olive oil, balsamic vinegar, salt, pepper, and if you like, a drizzle of maple syrup for extra caramelization. When they come out of the oven, they’re glossy and just sweet enough, and their color is the perfect juxtaposition to the polenta giving them a wow factor right on top.
On a practical note: If you’re batch cooking for the week, both parts keep well! Reheat the polenta gently with a splash of broth or plant milk and top with whatever roasted vegetables you have left (or even make a fresh batch). Or keep leftover beets handy to add to salads, grain bowls, or sandwiches later on. Both parts are flexible ultimately!
To finish, a drizzle of balsamic glaze or olive oil and a scatter of chopped herbs makes this feel like its right out of a restaurant, even if you’re eating it on the couch (not that I did..or did I?). It’s proof that a few good ingredients—pumpkin, cornmeal, and beets—can still feel special without needing much else.

Pumpkin Polenta with Roasted Balsamic Beets

Ingredients
For the Balsamic Beets:
- 4 medium beets peeled and cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon maple syrup optional, for added caramelization
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Pumpkin Polenta:
- 4 cups vegetable broth or water with ½ teaspoon salt
- 1 cup coarse cornmeal or polenta
- 1 cup pumpkin purée (not pumpkin pie filling!)
- 1 tablespoon olive oil or butter
- ¼ cup nutritional yeast or grated Parmesan
- ½ teaspoon garlic powder
- ¼ teaspoon nutmeg
- Salt and pepper to taste
Optional Toppings:
- Chopped parsley or sage leaves
- Extra drizzle of balsamic glaze or olive oil
- Toasted walnuts or pumpkin seeds
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a bowl, toss beet wedges with olive oil, balsamic vinegar, maple syrup, salt, and pepper. Spread evenly on the baking sheet and roast for 30–35 minutes, turning halfway through, until tender and slightly caramelized.
- In a medium saucepan, bring vegetable broth to a boil. Gradually whisk in the cornmeal while stirring to prevent clumps. Lower the heat to medium-low and continue stirring for 20–25 minutes, until the mixture thickens and pulls away from the sides of the pot.
- Stir in the pumpkin purée, olive oil or butter, nutritional yeast, garlic powder, nutmeg, and salt and pepper. Continue stirring for 3–5 more minutes until creamy and smooth.
- Spoon the warm pumpkin polenta into shallow bowls. Top with roasted balsamic beets. Drizzle with extra balsamic glaze or olive oil if desired. Garnish with chopped parsley, sage, or toasted nuts for extra texture.
