High Protein Cottage Cheese Berry Breakfast Bake

Breakfast that feels like both a sweet treat AND a smart choice is the kind of energy most mornings could use, at least in my kitchen. This High Protein Berry Cottage Cheese Breakfast Bake fits right in that pocket with its wholesome, colorful, and relatively quick prep work when days feel already full right from the sunrise.

The base is cottage cheese blended with eggs and oats, which creates a tender, almost custard-like texture. I have really come around in my own personal tastes to like cottage cheese this year, but I still find it best when its paired in dishes like this with other items. This Bake is not trying to be a pancake or a muffin or something it isn’t; it’s its own thing; somewhere between a baked oatmeal and a light cheesecake. The berries burst and release their juices as they bake, adding pockets of tart sweetness that balance the creaminess perfectly.

I like (and recommend!) making this in a square glass dish because it helps you see when the edges start to turn golden; that’s the moment it’s ready. I haven’t over-baked this, but I would imagine that it’s not nearly as good so make sure to keep an eye out for that golden hue. Once it cools slightly, it will slice into neat squares that hold up well for meal prep. It’s great warm right out of the oven or cold from the fridge with a drizzle of maple syrup or a spoon of yogurt (and pro tip for some extra protein — non-fat plain Greek yogurt would give it a healthy extra boost!)

Cottage cheese is the star here. It’s high in protein, mild in flavor, and keeps the bake from drying out. Blending isn’t necessary; the curds melt into the oats as it bakes. If you’re looking for a protein-forward breakfast that is as quick but wayyyy better than your favorite protein bar, this recipe will quickly find a home in your rotation, like it has mine.

Ingredients
  

  • 1 ½ cups cottage cheese 2% or low-fat
  • 3 large eggs
  • 1 cup milk dairy or unsweetened almond milk
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • ½ cup vanilla or unflavored protein powder whey or plant-based
  • 1 ½ tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 2 cups mixed berries fresh or frozen; blueberries, raspberries, or strawberries
  • 1 tbsp butter or coconut oil for greasing the dish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×9 glass baking dish with butter or coconut oil.
  • In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup, and vanilla until well blended.
  • Stir in oats, protein powder, baking powder, cinnamon, and salt. Mix until just combined; the batter will be slightly loose.
  • Fold in 1 ½ cups of the berries, reserving the remaining ½ cup for topping.
  • Pour the mixture into the greased baking dish and spread evenly with a spatula. Scatter remaining berries across the top.
  • Bake for 35–40 minutes, until the center is set and the edges are golden.
  • Let cool for 10 minutes before slicing. Serve warm or store for meal prep.

Notes

For extra sweetness, drizzle with a touch of maple syrup or a spoonful of Greek yogurt before serving.
This bake reheats well in the microwave or toaster oven; store leftovers in the fridge for up to 4 days.
Use frozen berries straight from the freezer—no need to thaw. Add a tablespoon of chia seeds or flax for more fiber.
