
It was the first rainy day of the fall season, and you know what that means: soup season has officially began.
The sky was gray, the windows fogged a little, and I found myself rummaging through the fridge. As someone who keeps a LOT of fresh vegetables on hand, I knew I had everything I needed without a run to the store, and baby, I was all in. White pumpkin, kale, a stray leek I’d been meaning to use, and pretty much every standard to a good soup (carrot, celery, onion and garlic).
This is the kind of recipe I reach for when I want something healthy but not heavy, and thats also not a salad (IYKYK) without much fuss. It’s flexible, forgiving, and one of those soups that tastes even better the next day or two. The white pumpkin gives it a mild, slightly sweet creaminess which balances nicely with leek and kale, and pastina adds just enough body to make it feel like a meal rather than a starter.
If you’re stocking your pantry for soup season, this recipe is a great one to keep in rotation because:
- You can swap the white pumpkin for any sturdy winter squash like kabocha or butternut.
- The kale can be replaced with spinach or even shredded cabbage if that’s what you’ve got.
- It’s hearty but still light enough to pair with a grilled cheese or just a slice of crusty bread (yay team Sourdough!).
A few practical tips:
- Dice the pumpkin and potatoes into even-sized pieces so they cook evenly.
- Pastina cooks fast, so add it toward the end; otherwise it’ll drink up all your broth.
- The soup thickens as it sits (esp thanks to Pastina). If you’re reheating leftovers, just splash in more broth or water to loosen it.
This pot came together in about an hour and 20 minutes start to finish, but the active time was minimal…mostly chopping. If you’re meal-prepping, it’s worth doubling because it keeps well in the fridge for several days and freezes beautifully.
Rainy-day or not, this soup is proof that a handful of vegetables and a little patience can turn into something satisfying and cozy. Enjoy!

Country-Style Vegetable Soup with White Pumpkin, Kale & Pastina
Equipment
- Large Dutch oven or heavy soup pot (6-8 qt)
- Cutting board & chef’s knife
- Wooden spoon or ladle
- Measuring cups & spoons
Ingredients
- 2 Tbsp olive oil or enough to lightly coat pot bottom
- 1 large yellow onion diced
- 1 medium leek white & light green parts only, cleaned and sliced
- 3 medium carrots peeled & diced
- 2 ribs celery diced
- 3 cloves garlic minced
- 2 medium potatoes Yukon or russet, peeled & diced
- 2 cups white pumpkin peeled & cut into ¾-inch cubes
- 2 medium tomatoes diced (or 1 cup canned diced tomatoes)
- 1 cup frozen peas
- 4 cups vegetable broth plus more as needed
- 2 cups water
- 1 cup pastina tiny pasta such as acini di pepe or stelline
- 2 cups kale ribs removed and chopped
- 1 ½ tsp kosher salt or to taste
- ½ tsp freshly ground black pepper or to taste
- Optional: pinch of red pepper flakes for gentle heat
- Optional garnish: fresh parsley
Instructions
- Heat olive oil in a large Dutch Oven or Soup Pot over medium heat. Add onion, leek, carrot, and celery. Cook 5–6 minutes until softened and fragrant.
- Stir in garlic, potatoes, and white pumpkin cubes. Cook another 3–4 minutes, stirring occasionally, to coat in the aromatics.
- Stir in diced tomato, vegetable broth, and water. Season with salt and pepper (and red-pepper flakes if using). Bring to a gentle boil, then reduce to a simmer.
- Cover partially and simmer for 20–25 minutes, or until potatoes and pumpkin are fork-tender.
- Stir in pastina. Simmer uncovered for 6–8 minutes, stirring occasionally, until pasta is cooked al dente. At the end, add in peas and kale and gently cook on low until kale is wilted and peas perk up to bright green. Add extra broth or water if soup becomes too thick.
- Adjust seasoning with more salt and pepper if needed. Ladle into bowls and garnish as desired. Serve hot with crusty bread (I prefer sourdough!).
