Chai Spiced Pear Tarts

If there’s a season that was tailor made for pears, it’s fall. And thats coming from a person who grew up with a beautiful pear tree in my backyard, that pears would hang from the branches of all late summer.
And…if there’s a spice blend that deserves a starring role right now, it’s definitely a spiced chai.

These mini tarts are what happen when a rainy afternoon meets a craving for something elegant yet low-key, the buttery pâte sucrée shells (basically a French sweet pastry that tastes like a shortbread cookie) cradling slices of pears that have been gently poached in homemade chai syrup. The smell alone could win an autumn bake-off.

I almost went the hand-pie route at first, mostly because I only had two pears staring at me on the counter. But then the more inspired part of my brain kicked in and… tarts it was. Even though I had to dig out these tart pans from the back of my baking cabinet, + in the process realizing I need to do a larger project of getting rid of some excess bakeware, but thats another story for another time.

The real magic is in the poaching liquid. You simmer water, sugar, a strip of citrus peel (I did orange), and your own chai blend: cinnamon, cardamom, ginger, cloves, nutmeg, and black pepper, until it’s fragrant enough to make your whole kitchen smell like fall. After the pears take their little bath, you keep simmering that liquid down to a shiny syrup you’ll drizzle over the finished tarts. Do not skip that part btw; it’s liquid gold right there and is good on truly anything else you wanna add it to.

These tarts are ideal when you want something a little special without a full-blown pie commitment. They’re also the sort of dessert that makes dinner guests think you went to pastry school; you don’t have to tell them you made the crust in one bowl and poached the pears while scrolling through all the TikTok album release conspiracies for Taylor Swift (to much information? oh well).

Serve them just warm with a dollop of barely sweetened whipped cream, crème fraîche, or even a scoop of vanilla bean ice cream if you’re feeling extra. If you’re like me, you’ll have one tart for dessert just as is because it’s truly amazing on its own too.

So go ahead, give those pears the chai treatment they deserve and let these little tarts steal the spotlight on your fall table.

Servings 4 mini tarts

Ingredients

Chai Spice Blend (makes extra)

  • 3 Tbsp ground cinnamon
  • 2 Tbsp ground cardamom
  • 1 Tbsp ground ginger
  • 1 Tbsp ground cloves
  • 2 tsp ground nutmeg
  • 2 tsp ground black pepper

Pâte Sucrée (Sweet Tart Dough)

  • 1 ¼ cups 150 g all-purpose flour
  • ¼ cup 30 g powdered sugar
  • ¼ tsp salt
  • ½ cup 113 g unsalted butter, softened
  • 1 large egg yolk
  • ½ tsp vanilla extract

Chai-Poached Pears

  • 2 ripe but firm pears peeled, halved, and cored
  • 2 cups water
  • ½ cup sugar or honey/maple
  • 1 tsp vanilla extract
  • 2 tsp chai spice blend
  • 1 strip lemon or orange peel optional

Instructions

Make the Pâte Sucrée

  • Cream the butter and powdered sugar together in a bowl until smooth.
  • Beat in the egg yolk and vanilla.
  • Add flour and salt, mixing until dough just comes together.
  • Shape into a disk, wrap in plastic, and chill at least 30 minutes.
  • Roll out on a floured surface and press into 3–4 mini tart pans. Trim edges. Chill again while preparing pears.

Poach the Pears

  • In a small saucepan, combine water, sugar, vanilla, chai spice, and citrus peel. Bring to a simmer.
  • Add pear halves, cut side down, and simmer gently for 15–20 minutes, turning halfway. Pears should be tender but not mushy.
  • Remove pears with a slotted spoon. Slice thinly.
  • Continue simmering liquid for 5–10 minutes until syrupy.

Assemble the Tarts

  • Preheat oven to 350°F (175°C).
  • Place pear slices neatly in the chilled tart shells (fan them for a pretty effect).
  • Drizzle each tart with 1–2 teaspoons of reduced chai syrup.
  • Bake 20–25 minutes, until crust is golden.
  • Brush tops with extra syrup for shine.

Notes

Pâte sucrée is delicate: chill your dough well so it rolls out cleanly.
You’ll have leftover chai spice blend — sprinkle it over oatmeal, coffee, or cookies.
For an extra flourish, serve with lightly whipped cream, crème fraîche, or a drizzle of dark chocolate.
