Sweet Potato Oatmeal Muffins

Sweet potato is one of those ingredients that quietly transforms baked goods. It brings moisture, natural sweetness, and a subtle “of the earth” energy that plays beautifully with warm spices. When paired with hearty oats, you get a muffin that feels both cozy and substantial. OH, AND high fiber! These sweet potato oatmeal muffins are the kind of bake that can carry you from breakfast on the go to a mid-afternoon coffee break.

The texture is bakery perfect: soft crumb, tall domed tops, and a bit of chew from the oats. Maple adds depth and helps us stay refined sugar free on these, while cinnamon and nutmeg bring that familiar autumn warmth. I like to fold in walnuts (or pecans) for a little crunch, but they’re just as lovely plain or with a sprinkle of oats, cinnamon, and sugar on top for that bakery sparkle.

Think of them as cousins to pumpkin muffins, but with a slightly sweeter and creamier vibe thanks to the sweet potato. If you already have mashed sweet potato leftover from dinner, this recipe is an easy win. And if not, roasting a couple of orange-fleshed sweet potatoes until caramelized makes all the difference in flavor — bakery tricks are often about those small steps.

Serve them warm, and try not to eat them all too quickly… they will go fast!

Ingredients
  

  • 1 1/2 cups 190 g all-purpose flour
  • 1 cup 90 g old-fashioned rolled oats, plus extra for topping
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup 225 g mashed roasted sweet potato (about 2 medium sweet potatoes or 3 small sweet potatoes)
  • 3/4 cup maple syrup
  • 2 large eggs or flax eggs for vegan
  • 1/2 cup 120 ml neutral oil (like grapeseed or canola)
  • 1/3 cup 120 ml whole milk or plant-based milk
  • 1 tsp vanilla extract
  • Optional: 1/2 cup 60 g chopped toasted pecans or walnuts
  • Topping: 2 tbsp turbinado sugar 1 tsp cinnamon + 2 tbsp rolled oats

Instructions
 

  • Preheat oven to 350°F (190°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • In a medium bowl, whisk together mashed sweet potato, maple syrup, eggs, oil, milk, and vanilla until smooth.
  • Add wet ingredients to the dry ingredients and gently fold with a spatula until just combined. Do not overmix. Fold in nuts if using.
  • Divide batter evenly among muffin cups (about 3/4 full). Sprinkle tops with extra oats and turbinado sugar for a bakery finish.
  • Bake 20–22 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
  • Let muffins rest in the pan 5 minutes, then transfer to a cooling rack. Serve warm or at room temperature.

Notes

For the best flavor, roast sweet potatoes whole at 400°F (200°C) until soft and caramelized, about 45 minutes. Cool, remove skins then mash before using.
Muffins will keep 3 days at room temp in an airtight container, or freeze up to 2 months.
Add chocolate chips, dried cranberries, or swap nuts for pumpkin seeds to vary the flavor.
