For this bowl, the roasted pumpkin takes center stage, offering a natural sweetness and richness that pairs beautifully with slightly bitter but still delicate greens. Couscous makes for an easy grain base since it cooks in minutes, soaking up the lemon-olive oil dressing like a sponge.

Pumpkin Greens Grain Bowl

Ingredients
  

  • For the bowl:
  • 1/2 of a small sugar / pie pumpkin about 1 lb, peeled, seeded, and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup of chickpeas drained and rinsed
  • 1 tbsp olive oil for chickpeas
  • ½ tsp cumin
  • 1 cup couscous
  • 1 ¼ cups boiling water or vegetable broth
  • 1 tbsp olive oil or vegan butter for couscous
  • 1 bunch mixed baby greens of choice
  • Salt and pepper to taste
  • Optional toppings:
  • Pomegranate seeds
  • Toasted pepitas
  • Fresh parsley
  • For the lemon-olive oil dressing:
  • 1/3 olive oil
  • Juice of 1 lemon
  • 1 tbsp maple syrup
  • 1 small garlic clove grated
  • 3 –4 tbsp water to thin
  • Salt to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Toss the cubed pumpkin with olive oil, smoked paprika, cinnamon, and salt. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
  • On a separate sheet pan, toss chickpeas with olive oil, cumin, and a pinch of salt. Roast alongside pumpkin for 20–25 minutes, until crispy.
  • Meanwhile, place couscous in a medium bowl. Pour boiling water or broth over it, add olive oil or vegan butter, cover, and let sit for 5 minutes. Fluff with a fork.
  • To make the dressing, whisk together olive oil, lemon juice, maple syrup, garlic, and water until creamy and pourable. Adjust with more water if needed. Season with salt to taste.
  • Assemble bowls by layering couscous on the bottom, followed by roasted pumpkin, greens, and chickpeas. Drizzle generously with dressing.
  • Garnish with pomegranate seeds, toasted pepitas, and fresh parsley if desired.

Notes

Pumpkin can be swapped for butternut squash or sweet potato.
Couscous cooks quickly, but for extra nutrition, try quinoa, farro, or brown rice.
The dressing can be made ahead and stored in the fridge for up to 5 days.
For extra protein, add roasted tofu or tempeh.
