It’s the kind of recipe I turn to when it’s hot out and I want something hydrating, fresh, and full of color.

Peaches and kale might not seem like the obvious pair, but once you’ve massaged that kale down with a splash of lemon and tossed it with sweet stone fruit, you’ll get it. The textures balance each other in the best way—soft and tender meets hearty and crisp—while the berries and pumpkin seeds bring just enough contrast to keep every bite interesting.

  • Small jar or bowl for dressing

Ingredients
  

For the salad:

  • 1 large bunch curly kale or lacinato, stems removed and chopped
  • ½ lemon juiced (for massaging the kale)
  • 2 ripe freestone peaches sliced
  • ½ cup raspberries
  • ½ cup blueberries
  • ¼ cup pumpkin seeds raw or toasted

For the vinaigrette:

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar or white wine vinegar
  • 1 teaspoon maple syrup or agave
  • ½ teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Add chopped kale to a large bowl and drizzle with lemon juice. Massage the kale with your hands for 1–2 minutes, until it softens and turns a deeper green.
  • If using freestone peaches, the pit should remove easily. Slice into wedges or bite-sized pieces.
  • To the massaged kale, add sliced peaches, raspberries, blueberries, and pumpkin seeds.
  • In a small jar or bowl, whisk together olive oil, vinegar, maple syrup, Dijon mustard, salt, and pepper until emulsified.
  • Drizzle the vinaigrette over the salad and gently toss to combine. Serve immediately or chill for 10 minutes for an extra refreshing bite.

Peach tip: Look for freestone peaches at your farmers’ market—they’re easier to slice and less messy to work with.
Kale tip: Acid (like lemon juice or vinegar) helps break down kale’s fibrous texture and makes it more palatable—don’t skip this step!
