Tofu Shawarma Stuffed Pitas

Tofu Shawarma has been on my to-do list of making for quite a while now, so believe me when I say that this was worth the wait. There’s truly something satisfying about biting into a warm, stuffed pita loaded with crispy, spiced tofu, fresh veggies, and a creamy tzatziki. This tofu shawarma hits every note—deeply savory, perfectly crisp around the edges, and loaded with bold Middle Eastern-inspired flavor. It feels like a street food moment at home, and perfectly vegan at that.

The tofu gets marinated in a vibrant spice blend with coconut yogurt, lemon, tomato paste, salt and just a touch of maple syrup to balance the flavors. Roast it until golden, tuck it into a fluffy pita, pile on fresh veg and herbs, and finish with tahini or a quick garlic yogurt sauce. You’ll want to make this one again and again – especially for grab and go, wrapping in wax paper (like in the photo!).

  • Air fryer method: Cook at 375°F for 14–16 minutes, shaking halfway, until crispy.
  • Warm your pita or flatbread. Spread with tahini sauce or garlic yogurt sauce, then layer in the tofu, fresh veggies, herbs, and any pickled toppings. Finish with a squeeze of lemon and serve immediately.

Notes

Tofu tip: For best texture, use super-firm tofu or freeze and thaw tofu before pressing to give it a more meaty chew.

You can marinate the tofu up to 2 days in advance. Cooked tofu can be stored in the fridge and reheated in the oven or air fryer for max crisp.
Serving idea: Turn this into a shawarma bowl with rice, greens, and all the toppings if you don’t have pitas on hand.
