When the heat kicks up and your appetite leans more toward fresh and light than hot and hearty, enter: the Passionfruit Parfait. It’s a tropical daydream made edible!

I’ve always thought passionfruit was one of those produce items that feels extra—like something you’d find at a boutique hotel breakfast spread or tucked into a high-end dessert menu. Every year around late spring, I start to keep my eyes peeled for it in the grocery store or market, and celebrate its arrival! It’s celebrated especially so when you scoop it fresh over creamy coconut yogurt and top it with a little toasted magic. The most doable luxury of your week.

This parfait is bright, sweet-tart, and ridiculously (good, and) refreshing. The yogurt is rich and cool, the passionfruit adds a juicy tang, and the toasted coconut and macadamias bring the crunch and warmth that makes each spoonful interesting. It’s like sunshine, cream, and texture all teamed up for the ultimate summer bite.

And the best part? It takes about 15 minutes start to finish. No blending. No baking. Just a few pantry staples and a ripe passionfruit or two.

Serve it in a tall glass and layer it like you’re styling a magazine shoot, or toss it all into a bowl for a more “I’m eating this barefoot on my porch” kind of energy. Either way, it feels good to eat—light, cooling, and naturally sweetened.

Passionfruit Parfaits

Passionfruit (and Coconut!) Parfaits are the kind of luxury that feels indulgent but is surprisingly simple to make. With creamy vanilla coconut yogurt, tart and juicy passionfruit, buttery toasted macadamias, and golden toasted coconut, each spoonful is a little tropical escape. Whether you're hosting brunch, meal-prepping snacks, or just craving something refreshing and sweet, this parfait is sunshine you can eat.

Equipment

  • Parfait glass, mason jar, or bowl
  • Spoon
  • Small skillet (for toasting if needed)

Ingredients
  

  • 1 cup unsweetened vanilla coconut yogurt
  • 1-2 teaspoons maple syrup adjust to taste
  • 3-4 fresh passionfruit halved and scooped
  • 2 tablespoons unsweetened shredded coconut lightly toasted
  • 2 tablespoons raw macadamia nuts chopped and toasted

Instructions
 

  • In a dry skillet over medium heat, toast the shredded coconut until lightly golden, about 2–3 minutes. Repeat with chopped macadamias if they’re not pre-toasted. Set aside to cool.
  • In a small bowl, stir the maple syrup into the coconut yogurt. Taste and adjust sweetness as needed.
  • Assemble: In a glass or jar, layer the sweetened yogurt with fresh passionfruit pulp, toasted coconut, and toasted macadamia nuts. Repeat until all ingredients are used.
  • Enjoy immediately for crunch and freshness.
  • Optional: Chill for 10 minutes for a cooler bite.

Notes

You can prep the yogurt and toppings ahead of time, but layer just before serving to preserve crunch.
No passionfruit? Try mango, pineapple, or a swirl of citrus compote.
Nuts optional: Skip the macadamias or sub with toasted sunflower seeds for a nut-free option.
Add granola or chia seeds for a more filling version.
