If you are a Millennial like me, you might have also grown up going to a TGIFriday’s with your friends. It was a STAPLE for the high school crowd back in the day in my hometown, and one of my favorites were the green bean fries. There was just something about them that was truly addictive. Maybe it was the wasabi ranch dip it came with, or the salty fried quality of the beans. Never the less, it counted in our book as a vegetable, and we ate them with every visit. Now, let me pause here. Green bean fries are one of those menu items that I assume most are skeptical about (that is, until they try them). And that totally makes sense. These don’t necessarily look like a top contender when it comes to appetizers. But man oh man, these are genuinely addictive — crispy, well-seasoned, and satisfying in a way that makes you reach for more without even thinking about it. And because of those TGIFriday’s green bean fries being so iconic, I wanted to nail a version you could make at home. Especially now that they’ve gone from 600 locations to just 80 (and shrinking! sadly!!).
The key to getting green bean fries right is the coating and the cooking method. You want a light, crispy breading that clings to the beans without being heavy or falling off. A simple dredge in seasoned flour, then egg or a plant-based alternative, then seasoned breadcrumbs gets you exactly there. Panko breadcrumbs are your best friend in this situation because they create a lighter, crunchier coating than regular breadcrumbs and they hold up really well in the oven or air fryer.
The air fryer is my preferred method here because you get that fried texture without actually frying, and the beans stay crisp all the way through without getting soggy. The oven works too, but if you do please just make sure you spread them in a single layer and give them a flip halfway through. Either way though, you are looking for deep golden color and a coating that has a satisfying crunch when you bite through it.
Serve these with a good dipping sauce. Ranch is the classic pairing and it works perfectly. A spicy aioli or a simple garlic yogurt sauce are also wonderful options. These are best eaten immediately while they are still hot and crispy, so have your sauce ready and your people gathered before they come out of the air fryer.
This is a fun recipe for a game day snack, a party appetizer, or just a weeknight side that feels a little more exciting than usual. Once you make them, I think you will understand why I was so pleased with how they turned out!
